How many recipes do the following cookbooks contain ?

Aw, you deserve a better answer. Both are packed, yes, but the French Chef Book is one you could easily get through. I, too, am thinking of doing The Art of French Cooking. It's a kicky idea. I haven't seen the movie Julie and Julia, but the concept is sweet!
