How can I log CPU usage?

I have noticed that sometimes my computer will become unresponsive for several seconds, during which time I cannot bring up the task manager so that I might see which process is eating all the CPU time. I would like to log CPU usage so that I can check right after I notice one of these mysterious unresponsive incidences. Anyone know of a program that can log the CPU usage of some or all running processes?
